When choosing garlic, you want to select firm, fresh bulbs. When you squeeze the bulb, does it have a little "give" to it? If so, keep looking. It should feel hard, like a carrot, not forgiving like an avocado. Also, avoid bulbs that have green sprouts peeping out of the top of the individual cloves; they tend to have a bitter finish. Ingredients: 1 whole head of garlic, papery skin left on 1-2 tsp. olive oil Directions: Preheat oven to 325 degrees F. Using a well sharpened knife, cut the top of the garlic head off, exposing the tips of the individual garlic cloves. Set the head of garlic in the middle of a 12-inch square of aluminium foil. Drizzle the olive oil over the garlic. Gather the foil up loosely around the bulb and twist it closed. You'll end up with something that looks like a giant Hershey's Kiss. Place the wrapped garlic in the oven. Bake until tender, 25-35 minutes.
