Chinese Walnuts
- To 6 cups boiling water, add 4 cups walnuts, and bring to boil.
- Boil 1 minute, drain in collander, then rinse under very hot tap water.
- Very briefly dry on terrycloth towel, but keep hot.
- Toss in 1/2 cup sugar and 1 Tablespoon powdered ginger until ginger melts.
- Fry in 2 batches in 1" oil.
- Drain in collander, then spread on cookie sheet and lightly salt.
Easy, eh? And they're delicious.
